Job Summary
The Raintree Hotels, Chennai, is seeking an experienced and dynamic Kitchen Stewarding Manager to lead, train, and inspire our stewarding team. This role is central to ensuring smooth Back of House operations, exceptional hygiene standards, and efficient support to our culinary and food & beverage departments. Key Responsibilities
Stewarding Operations & Team Leadership
- Supervise all stewarding staff, ensuring duties are completed efficiently and to the highest standards.
- Lead by example and cultivate a culture of cooperation, respect, and discipline within the team.
- Conduct ongoing training, enforce SOPs, and maintain documentation for disciplinary procedures.
- Celebrate team achievements and recognize outstanding performance.
Cleaning, Hygiene & Sanitation
- Ensure all Back of House areas meet top-tier cleanliness, hygiene, and sanitation standards.
- Verify water temperatures, chemical levels, and cleaning processes; ensure proper documentation.
- Oversee cleaning routines for service ware, dishwashing equipment, floors, kitchen tools, and food holding units.
- Ensure all equipment is in safe working condition and coordinate repairs when needed.
Operational Efficiency & Equipment Management
- Direct and support stewards to make daily clean-up operations smoother and more efficient.
- Coordinate with chefs, banquet teams, and F&B outlets to ensure adequate operational equipment.
- Assist in transporting items for banquet setups, plate-ups, and buffets.
- Manage storage, movement, and tracking of banquet equipment and stewarding assets.
Inventory, Procurement & Cost Control
- Work with the Stewarding Manager to establish par stock levels for equipment and supplies.
- Approve store requisitions and monitor the usage of chemicals and tools.
- Conduct monthly stock takes and prepare reports on shortages or breakage.
- Implement measures to reduce loss of silverware and minimize breakage of china and glassware.
- Adhere to budget guidelines when requesting replacements or replenishments.
Cross-Department Coordination
- Liaise with Assistant F&B Managers and Outlet Managers to anticipate daily stewarding needs.
- Coordinate with the Executive Chef, Banquets, and Catering teams for operational requirements.
- Ensure all required service items are available through timely communication and planning.
Compliance & Standards
- Ensure compliance with hotel sanitation and food safety guidelines.
- Uphold loss-prevention and safety procedures to avoid accidents and manage operational costs.
- Maintain high-quality service standards across stewarding operations.
Additional Responsibilities
- Assist culinary staff as needed to support smooth kitchen operations.
- Carry out any additional tasks assigned by hotel management.
Qualifications
- 5–6 years of experience in hotel stewarding with strong operational and hygiene expertise.
- Excellent verbal and written communication skills in English.
- Strong leadership, interpersonal, and problem-solving abilities.
- Proficiency in Microsoft Office and basic computer applications.
Preferred Skills
- Minimum 4 years of experience in procurement, F&B, culinary operations, or related areas.
- Prior leadership experience in a stewarding department is highly desirable.
