Job Summary
The Food & Beverage Manager will be responsible for leading and managing the complete F&B operations across Mansha Regency and Mansha Palace in Port Blair. This role oversees all restaurants, bars, banquets, lounges, and in-room dining services while ensuring exceptional guest experiences, operational efficiency, staff development, and revenue growth.
The ideal candidate is a strong leader with excellent communication skills, hands-on operational expertise, and the ability to maintain high service standards across multiple outlets.
Key Responsibilities
Operational Leadership

- Oversee day-to-day F&B operations across both hotels.
- Ensure smooth functioning of restaurants, lounges, banquets, room service, and special events.
- Uphold high standards of service, hygiene, and food quality.
- Monitor inventory, stock controls, and F&B cost management.
Team Management

- Lead, train, and motivate service teams, supervisors, and captains.
- Conduct daily briefings and regular training sessions.
- Manage staff schedules, performance reviews, and disciplinary procedures.
Guest Experience

- Deliver prompt, professional, and personalized service.
- Address guest concerns and ensure service consistency across properties.
Financial & Revenue Management

- Develop strategies to grow F&B revenue and optimize profitability.
- Monitor food and beverage cost, wastage, and pricing.
- Collaborate with finance on budgeting and forecasting.
Menu & Quality Control

- Work closely with the Executive Chef on menu planning and promotions.
- Maintain portion control, presentation standards, and product consistency.
- Ensure compliance with FSSAI norms and hotel safety regulations.
Banquets & Events

- Lead banquet operations, weddings, conferences, and special events.
- Coordinate with sales & marketing for event planning and execution.
- Ensure seamless collaboration between kitchen and service teams.
Coordination & Reporting

- Conduct regular operational rounds at both properties.
- Report performance updates, challenges, and improvement plans to management.
- Implement and enforce SOPs across all outlets.
Qualifications & Requirements
- Bachelor’s degree or diploma in Hotel Management / F&B specialization.
- 4–6 years of experience in hotel F&B operations (multi-property experience preferred).
- Strong leadership and people management skills.
- Excellent communication and guest-service mindset.
- Ability to manage high-pressure environments and multiple outlets.
- Good understanding of F&B trends, cost control, and industry best practices.
