Job Summary
The F&B Manager will be responsible for managing the entire Food & Beverage portfolio including specialty restaurants, lounges, bars, banquets, and in-room dining. This leadership role focuses on driving revenue, elevating service quality, ensuring operational consistency, and maintaining the highest standards of hygiene and brand compliance across the resort.
You will partner closely with Culinary, Sales, Housekeeping, Procurement, and other operations teams to deliver a seamless guest experience aligned with The LaLiT’s luxury positioning.
Core Responsibilities
Operational Leadership
- Oversee all F&B outlets and banquet operations as independently managed profit centres.
- Ensure consistency in guest experience and adherence to brand SOPs and standards.
- Coordinate cross-functionally with chefs, housekeeping, engineering, and sales & marketing.
Financial & Budgetary Oversight
- Prepare and manage departmental budgets; monitor food & beverage costs and implement cost-control measures.
- Manage labour costs, inventory, and wastage to optimise profitability without compromising quality.
- Lead forecasting, maintain performance dashboards, and analyse metrics for data-driven decisions.
Team Leadership & Training
- Recruit, mentor, and develop outlet managers and F&B teams; define KRAs/KPIs and conduct periodic reviews.
- Design and execute a structured training calendar focused on service excellence, product knowledge, and grooming standards.
- Foster a positive, growth-oriented culture that empowers team members.
Guest Experience Management
- Set and maintain service benchmarks for all outlets; ensure personalised and memorable guest experiences.
- Handle guest concerns and VIP escalations with professionalism and empathy.
- Oversee banquet standards and event execution to ensure flawless delivery.
Compliance, Hygiene & Safety
- Ensure strict adherence to HACCP, food safety, and local regulatory requirements.
- Conduct internal audits and ensure all venues meet hygiene and safety standards.
- Maintain beverage licensing, fire safety compliance, and sanitation protocols.
Marketing, Promotions & Purchasing Coordination
- Collaborate with Sales & Marketing to create promotional campaigns, special events, and festive menus.
- Align F&B offerings with guest demographics and evolving culinary trends.
- Partner with Procurement to negotiate supplier contracts and streamline purchasing processes.
Qualifications & Desired Skills
- Minimum 12 years in F&B operations, preferably in 5-star hotels or luxury fine-dining environments in India.
- Degree or diploma in Hospitality, Hotel Management, Business Administration, or related field.
- Proficiency in MS Office and hotel systems such as Opera.
- Fluency in English; familiarity with Indian cuisine is an advantage.
- Strong leadership, cost-control, budgeting, and problem-solving skills with attention to detail.
