Job Summary

The Director of Restaurants oversees all daily operations across Restaurants, Bars, and In-Room Dining. This leadership role ensures exceptional guest experiences, operational excellence, and strong financial results.

As a department head, the Director works closely with the Food & Beverage and Culinary management teams to maintain high service standards, elevate staff performance, and maximize revenue. This position plays a key role in maintaining the luxury service culture expected at The St. Regis Mumbai.

Candidate Profile

Education & Experience

Option 1:

  • High school diploma or GED
  • 6 years of experience in food & beverage, culinary, event management, or related field

Option 2:

  • 2-year degree in Food Service Management, Hospitality, Hotel & Restaurant Management, Business Administration, or a related field
  • 4 years of experience in food & beverage, culinary, event management, or related area

Skills & Knowledge Required

  • Customer & Personal Service: Strong grasp of customer needs, service quality standards, and satisfaction measurement.
  • Economics & Accounting: Understanding of P&L, operating budgets, forecasting, cost control, and financial reporting.
  • Analytical Thinking: Ability to analyze complex data, identify trends, evaluate solutions, and make informed decisions.
  • Financial Resource Management: Ability to allocate budgets efficiently and account for expenditures.
  • Administration & Management: Knowledge of planning, resource allocation, team structuring, and operational coordination.
  • Applied Business Knowledge: Understanding business dynamics, identifying opportunities/risks, and aligning teams to business goals.
  • Food Production & Presentation: Knowledge of food preparation, equipment, sanitation standards, and presentation techniques.
  • Material Resource Management: Ability to manage equipment, facilities, and inventory effectively.

Core Work Activities

1. Daily Operations Management

  • Forecasts beverage and food consumption to manage purchasing and requisitioning.
  • Conducts pre-service briefings with Culinary and Restaurant Managers to train staff on menu items.
  • Maintains sanitation and service standards in Restaurants, Bars, and Room Service.
  • Orders equipment, supplies, and manages special event service execution.

2. Budgeting & Financial Management

  • Manages controllable expenses to meet and exceed budget goals.
  • Understands departmental impact on overall property financial performance.

3. Leadership & Team Development

  • Sets realistic goals and leads the team toward achieving performance and financial targets.
  • Demonstrates integrity, communication skills, and strong leadership.
  • Builds trust and encourages cooperation among team members.
  • Identifies training needs and mentors staff for continuous growth.
  • Ensures compliance with food, beverage, liquor, and sanitation standards.
  • Acts as a guest service role model to uphold luxury service expectations.

4. Delivering Exceptional Guest Service

  • Ensures elevated guest satisfaction and retention through outstanding service.
  • Anticipates guest needs, provides coaching to staff, and monitors service quality.
  • Interacts with guests to gather feedback and address issues promptly.
  • Reviews guest satisfaction reports to implement service improvements.

5. Human Resource Responsibilities

  • Sets clear performance expectations and monitors team effectiveness.
  • Conducts performance appraisals for direct reports.
  • Ensures fair and consistent administration of property policies.
  • Hires and trains both management and hourly staff.
  • Observes service behaviors and provides feedback for improvement.

6. Additional Responsibilities

  • Communicates relevant updates to executives, peers, and team members.
  • Shares information proactively through written communication or meetings.
  • Analyzes operational data to make informed decisions and resolve issues.
